I think it’s safe to say that we all like Macaroni and Cheese. It’s a dish that always reminds me of childhood. We have been searching for awhile and just now came across this delicious Vegan Mac and Cheese Recipe.
The cheese mixture combines sweet potatoes and a few other ingredients to make a delicious and healthy vegan cheese option that paired perfectly with shell pasta. We added some sautéed Kale just to top it off with some greens.
The implications of this delicious and healthy mac and cheese recipe are endless because this vegan cheese is easy to make and can be used for many other dishes.
So without further ado, here is the recipe.
Easy Vegan Mac and Cheese Recipe
2 Medium Sweet Potatoes
8 oz Pasta Noodles (We used shell pasta)
2 Cups of Kale
2 Garlic Cloves (Whole)
1/2 Cup Nutritional Yeast
1 Tbs Olive Oil
1 Tbs Dijon Mustard
2 Tbs Tamari (Or Soy Sauce)
1 Cup Almond Milk
- Cut and peel sweet potatoes. Bring medium pot of water to boil, put in sweet potatoes and boil until soft. About 25-30 mins. Bring a seperate medium pot of water to boil, place in pasta and cook until soft.
- Once potatoes are boiled, place in blender along with garlic, nutritional yeast, olive oil, mustard, tamari and almond milk. Blend all ingredients together until smooth.
- Heat pan with 1 tsp olive or cooking oil to medium heat and saute kale until tender, about 5-7 mins.
- Serve and enjoy.
This vegan mac and cheese recipe is my all time favorite! Other options to make it even better are adding roasted broccoli, mushrooms or other vegetables to add some taste.
